La storiella

Devo dire che, IMHO, il limone nei dolci dá quel tocco particolare che fá la differenza e distingue un buon risultato da un ottimo risultato. Ho goduto di questo fatto per la crema che ho usato per farcire questi semplici biscotti fatti con una frolla particolare, che non prevede le uova nell'impasto. Come ogni volta che provo a fare una ricetta per la prima volta (scusate la ripetizione... ;-)) qualcosa è andato storto: ho cotto i biscotti un paio di minuti di troppo e si sono "abbronzati" troppo!

Credo che a cottura giusta sarebbero stati leggermente meno tostati e non dico morbidi, ma di quella giusta consistenza per la quale puoi sia mangiarli sia inzupparli (nel tè... ma devo ancora capire se è previsto dal galateo o no... ;-)).

Questa doveva essere la ricetta perfetta per il contest "È sempre l'ora del tè". Volevo creare una ricetta complicatissima che potesse impressionare Tuki, l'organizzatrice del contest, nonchè una delle foodblogger da cui ho molto da imparare per quanto riguarda l'arte pasticcera e della fotografia. Ma forse è meglio che mi presenti con una ricetta semplice e delle foto "difettose". Siccome i premi non arrivano in Australia, baratto un eventuale premio con una consulenza della ciliegina sulla food photography!! Va bene prof? ;-)

La ricetta

Dall'allegato "Baking favourites" della rivista Food Ideas che ho trovato per caso non ricordo dove... ;-)
Per 60 biscotti, che assemblati 2 a 2 fanno 30. :D

Ingredienti

  • Burro non salato a temperatura ambiente (tirarlo fuori dal frigo 2 ore prima di preparare la ricetta o scaldare 15 secondi al microonde, anche se non è la stessa cosa...)
  • Estratto di vaniglia: 5 ml
  • Zucchero a velo: 160 g
  • Farina 00: 300 g
  • Uova: 2 (100 g)
  • Zucchero: 110 g
  • Buccia grattugiata di un limone
  • Succo di limone: 60 ml
  • Burro: 30 g

Preparazione

  1. Foderare 2 teglie con la carta forno
  2. Montare il burro e la vaniglia utilizzare delle fruste elettriche. Aggiungere lo zucchero a velo e montare fino ad ottenere un composto uniforme. Incorporare la farina al fine di ottenere un impasto omogeneo.
  3. Versare il composto su una superficie leggermente infarinata ed impastare a mano formando una palla. Avvolgere con la pellicola trasparente, far riposare in frigo per 30 minuti.
  4. Preriscaldare il forno a 180°C o 160°C se ventilato
  5. Dividere l'impasto in 60 palline, riporle sulle teglie
  6. Schiacciare le palline utilizzando una forchetta (per evitare che la forchetta si attacchi all'impasto immergerla frequentemente in un contenitore di acqua)
  7. Infornare per 12 minuti (io più di 30!!!)
  8. Far raffredare i biscotti su una graticola
  9. Per il burro al limone scaldare uova, zucchero, burro, succo e buccia di limone in un pentolino a fuoco medio, mescolando continuamente fino ad ottenere una consistenza spalmabile (io ho scaldato per più di 30 minuti controllando che la temperatura non superasse gli 85 gradi per evitare che le uova non coagulassero)
  10. Rimuovere dal fuoco e far raffreddare completamente mescolando di tanto in tanto (io ho riposto su un piattino e ho lasciato riposare senza mescolare)
  11. Unire una coppia di biscotti utilizzando un cucchiaino di burro al limone

L'angolo della cultura

Sono un completo ignorante per quanto riguarda il tè. Tra l'altro in questo periodo sto proprio iniziando ad imparare come si degusta un altro tipo di bevanda: il vino. ;-)

The little story

I have to say that, IMHO, lemon on sweets give the particular taste that makes the difference between a good and a very good final result. I appreciate a lot the use of lemon for the cream used for this simple biscuits that use a particular pastry shortcrust that is made without eggs. As always something wrong happened as every time I test a recipe for the first time: I baked the biscuits a couple of minutes more than the necessary, so they browned too much!

This recipe should be the perfect recipe for the context . I wanted to create stunnings recipe and photo in order to impression Tuki the organizer of the context, since she's one of my favourite perfectionist-pastry-foodblogger. By the way, since I don't consider myself at a good level as cook and photographer I present a very simple recipe and photos with defects (white balanceeeee!!!!) that represent my actual level that I want to improve!

The recipe

From Australian "Baking favourites" of Food Ideas's magazine. Make 60 biscuits.

Ingredients

  • Unsalted butter at room temperature: 250 g
  • Vanilla extract: 1 tsp
  • Pure icing sugar: 160 g
  • Plain flour: 300 g
  • Eggs: 2 (100 g)
  • Caster sugar: 110 g
  • Grated rind of a lemon
  • Lemon juice: 60 g
  • Butter: 30 g

Method

  1. Line 2 baking trays with baking paper. Using an electric mixer, beat butter and vanilla until pale.Add icing sugar and beat until light and fluffy. Add flour and mix to form a dough.
  2. Turn out onto a lighty floured surface and gently knead to form a ball. Wrap in plastic wrap and chill for 30 minutes.
  3. Preheat oven to 180°C or 168°C fan. Roll teaspoons of dough into balls. Place on trays. Press with a fork (dip the fork in water to stop it sticking)
  4. Bake for 12 minutes, until coloured (I baked for 30 minutes!)
  5. Transfer to a rack to cool
  6. To make lemon butter, heat eggs, sugar, lemon juice and butter in a saucepan on medium, stirring constantly, for 5-10 minutes to boil, until thick. (I cooked for more than 3 minutes, paying attention to remain under 85°C to avoid eggs coagulation).
  7. Remove from heat and cool completely, stirring occasionally (I didn't stir :-))
  8. Sandwich together pairs of biscuits using half tsp of lemon butter each. Serve.

La storiella

Non so perché non faccio mai biscotti. I biscotti sono uno dei miei dolci preferiti. Ne mangerei a tonnellate per un tempo tendente ad infinitooooooooooo. Sia inzuppati sia non.
Quando ero piccolo penso di averne mangiati più di 50 tipi di marche differenti. Ora non ne mangio di molti tipi, perché cerco di comprare biscotti che contengano solo burro. No grassi vegetali, no oli vegetali generici (conoscete i grassi idrogenati?).
Qui in Australia nella mia lista di selezione compaiono gli Anzac. Questa volta ho voluto prepararmeli e il risultato è mooooooolto simile alla versione originale!!!

La ricetta

Non ho potuto seguire la ricetta originale, in quanto non avevo Golden syrup e baking soda. Ho omesso questi ingredienti e siccome l'impasto era troppo secco, ho aggiunto 100 g di latte.

Ingredienti (per 18 biscotti)

  • Farina 00: 100 g
  • Burro: 100 g
  • Latte intero: 100 g
  • Zucchero: 100 g
  • Farina di cocco: 85 g
  • Fiocchi d'avena: 85 g

Preparazione

  1. Preriscaldare il forno a 180°C
  2. Preparare una teglia rivestita con carta forno
  3. Mescolare gli ingredienti secchi: farina, zucchero, farina di cocco e fiocchi d'avena
  4. Sciogliere il burro (l'ho messo a pezzetti 40 secondi nel microonde)
  5. Aggiungere burro fuso e latte agli ingredienti secchi, mescolare
  6. Versare un cucchiaio di impasto sulla teglia e aggiustarlo in modo da fargli assumere una forma tonda
  7. Infornare per 15-20 minuti (io più di 30!)

L'angolo della cultura

Credo sia impossibile creare una versione ASI per i biscotti. Per un dolce ASI lievitato le calorie devono essere inferiori a 300 kcal per 100 g. Dato che la maggior parte degli ingredienti hanno più di 300 kcal per 100 g e durante la cottura la quantità d'acqua si riduce, la densità calorica per 100 g aumenta. L'unica maniera sarebbe, come per le torte, aggiungere una grande quantità di frutta (mediamente meno di 50 kcal/100 g), in questo modo la densità calorica finale dell'impasto diminuirebbe. Ma in questo caso sarebbe una torta data la grossa quantità di acqua! E un biscotto deve essere secco!

The little story

I don't know why I've never baked cookies. Cookies are one of my favourite sweets. When I was a child I think I ate more than 50 sort of cookies of different trademarks. Now don't eat various types of cookies because I try to purchase only biscuits with only butter. No vegetables fats, no vegetables oils (do you know trans fat acid?).

Here in Australia on my biscuit selection there are Anzac. This time I want to prepared them by myself and the result is veeeeeeery close to the original version!!!

The recipe

I couldn't follow the original recipe, because I didn't have Golden syrup and baking soda. So I omitted these ingredients and since the dough was very dry, I added 100 ml of milk.

Ingredients (for 18 biscuits)

  • Flour: 100 g
  • Butter: 100 g
  • Sugar: 100 g
  • Milk: 100 g
  • Coconut flour: 85 g
  • Oats: 85 g

Preparation

  1. Preheat the oven at 180°C
  2. Prepare an oven tray with a greaseproof paper
  3. Mixed together the dry ingredients: flour, sugar, coconut and oats
  4. Melt the butter (I cut and put it 40 seconds on the microwave)
  5. Add the butter and the milk to the dry ingredients and mixed together.
  6. Put a spoon of the dough on the tray and adjust to a round shape
  7. Bake for 15-20 minutes (I baked for more than 30!)

The culture corner

I think it's impossible to create an ASI version of cookies. For an ASI baked sweet calories should be less than 300 kcal/100 g. Since most of the ingredients have more than 300 kcal/100 g and during the baking the quantity of water is reduced, caloric density for 100 g increase. The only way is, like for cakes, to add a big quantity of fruits (50 kcal/100 g in average), so the final caloric density of the final dough decrease. But in that case it will be a cake because of the big quantity of water! A bisquit must be dry! :D
