La storiella

Ricetta facile, classica, tradizionale. In questo periodo voglio riuscire a masterizzare due preparazioni di base: pasta frolla e crema pasticcera.
Spesso voglio preparami qualcosa di dolce. Nonostante abbia gli ingredienti per fare una crostata preferisco fare i muffin. Perché? Più facili da fare.
Sballiato. Il motivo è che i muffin li ho fatti ormai 100 volte mentre avrò fatto 10 crostate se tutto va bene. Le ultime mi sembrano più difficili da fare, non ci vuol niente a cannare la pasta frolla, poi che palle bisogna farla riposare in frigo, la crema pasticcera può fare i grumi ecc.
I muffins? Mescoli tutto assieme e via!
Basta, bisogna risolvere sto problema, quindi per compensare i numeri farò un sacco di frolle e creme nei prossimi mesi. Quando li farò ad occhi chiusi passerò alla prossima preparazione "impegnativa". :)
Il livello di confidenza lo raggiungo nel momento in cui dico "Ok sto piatto/torta lo faccio, tanto è facile da fare e di sicuro mi riesce bene." Affermazione che non faccio mai la prima volta che provo un piatto nuovo. Anche se sembra facile. Un pizzico di sale in più può rovinare tutto. :)

Comunque ho notato che il mio "karma" in cucina sta evolvendo. Due anni fa ero impaziente. Volevo risultati immediati. Quindi ricette facili e veloci. Ora sto imparando ad apprezzare l'importanza dei tempi. Portare a temperatura ambiente la bistecca un paio di ore prima di cucinarla, far riposare la frolla in frigo prima di infornarla, far riposare la bistecca un paio di minuti dopo averla cucinata, sto tipo di robe.(*). Piccole attenzioni che fanno la differenza tra una risultato finale normale e uno buono (non raggiungo mai l'eccellenza, io :D). Anche se una fetta di torta impiega meno di un minuto per finire dal piatto allo stomaco. :) Ma questo non è importante. La soddisfazione di aver fatto le cose fatte bene e sapere di essere in grado di riprodurre il risultato quando si vuole basta e avanza!

(*) Sono ancora impaziente. I tempi per produrre un panettone sono ancora troppo lunghi per il sottoscritto. :)

La ricetta

Ingredienti, mise en place per tortiera da 28 cm, 8 porzioni

Pasta frolla

  • Farina debole 200 g
  • Sale un pizzico
  • Burro a cubetti 100 g
  • Zucchero 100 g
  • Uova sbattute 2 (100 g)
  • Vaniglia e buccia di limone a piacere

Crema pasticcera

  • Latte 250 g
  • Vaniglia
  • Zucchero 50 g
  • Uova 2 (100 g)
  • Farina 25 g

Mele caramellate

  • Mele sbucciate e tagliate e spicchi 300 g. Io le sbuccio, taglio a metà in orizzontale poi a fettine sottilissime. Con il mandolino (che non ho) dovrebbero venire perfette.
  • Zucchero 100 g

Preparazione

Pasta frolla

  1. In un frullatore, frullare (eh beh) farina, sale e burro (vaniglia e buccia di limone se li usate) fino ad ottenere briciole
  2. versare le uova e frullare per circa 10 secondi
  3. su un piano leggermente infarinato impastare velocemente
  4. formare un disco, avvolgerlo con la pellicola e fare riposare in frigo per minimo 30 minuti (ma anche tutta la notte va bene)
  5. infarinare leggermente il piano di lavoro, stendere la pasta frolla con il matterello, foderare la tortiera*
  6. cuocere in bianco

(*) siccome sono ancora una scarpa la pasta frolla mi si sbriciola sempre quando la rollo, devo capire dove sbaglio, con calma. Per cui appena impastata l'ho direttamente stesa sulla tortiera schiacciandola con le mani. Ovviamente lo spessore non è uniforme...

Crema pasticcera

  1. Riscaldare il latte e vaniglia a 80° (io uso il microonde)
  2. in una ciotola, mescolare con una frusta uova e zucchero, una volta amalgamati bene incorporare la farina
  3. versare il latte nelle uova a cucchiaiate (temperaggio)
  4. in un pentolino, riscaldare il composto fino a farlo addensare*

(*) Altro passaggio che devo ottimizzare. La prima volta ho portato ad ebollizione e mi si sono formati i grumi. La seconda mi è venuta perfetta ma sono rimasto MEZZ'ORA a mescolare a fuoco basso.

Mele caramellate

  1. Versare lo zucchero in un pentolino a fuoco medio e farlo caramellare*
  2. aggiungere le mele, ricoprirle con il caramello

* Pure qui ho caramellato troppo e il caramello si è indurito e diventato amarognolo

Assemblaggio

  1. Versare la crema nella frolla
  2. disporre le mele sulla crema. Faccio come in questo video.

L'angolo della cultura

Avrei dovuto scrivere un post corto. Alla fine mi sono preso e ho scritto 1329 in circa 2.5 ore. Un dattilografo scrive in media 80 parole al minuto, quindi avrebbe scritto il post in 16 minuti!!! Ok, poi si deve editare ma comunque...

The little history

Easy, straighforward, classic, basic, traditional recipe. In this period I am focus on two preparation that I want to master: shortcrust pasty and pastry cream.
Many times I want to prepare something sweet. Despite I have the ingredients for making a tart, I prefer to bake some muffins. Why? Because they are easier to make.
Bullshit. It's because I baked muffins 100 times while I maybe prepared only 10 tarts. Moreover a tart is more difficult to do. The probability to fail are higher. The pastry has to rest in the fridge, then you have to roll it. The pastry cream can curdle. Muffins? Mix all together and that's it!
So now for compensate the equation I will prepare A LOT of tarts. Let's say for the next 2 months. :)

When I will be enough confident, I can focus on another kind of preparation. Confidence means "I will do it because is very easy to do, it takes little effort and I'm sure that the final result will be good". I don't have confidence when I test a recipe for the first time. Even if it requires small easy steps. An excess pinch of salt can compromise the result.

I have noticed that my passion for cooking is evolving. Two years ago I have no patience. I wanted quick results. So only fast, easy recipes. Now I am starting to learn about the importance of the time. Place the steaks out of the fridge a couple of hours before cooking, resting the pastry in the fridge so the gluten relax, leave the bread dough to leave for a couple of hours, rest the meat after cooking, these kind of things(*). Small attentions that makes the difference on the final result. Even if the time transition for a piece of tart from plate to stomach is only 1 minute. :)
But this is not important. The satisfaction of being able of doing something well and have the ability to replicate the result whenever you want, is priceless!

(*) I'm still impatience. At the moment make a Panettone takes too much time. :)

The recipe

Ingredients, mise en place for a 28 cm tart tin, 8-10 portions

Shortcrust pastry

  • Flour 200 g
  • Salt a pinch
  • Butter, cubed 100 g
  • Icing sugar 100 g
  • Eggs, beaten 2 (100 g)
  • Vanilla and lemon zest

Pastry cream

  • Milk 250 g
  • Vanilla
  • Caster sugar 50 g
  • Eggs 2 (100 g)
  • Flour 25 g

Caramelized apples

  • Apples, peeled and cored 300 g. I sliced in half horizontally then vertically very thin.
  • Caster sugar 100 g

Method

Shortcrust pastry

  1. In a food processor, mix flour, salt, butter until mixture resembles fine crumbs
  2. add egg yolks, process to combine Wrap in plastic wrap, refrigerate for 1 hour to rest
  3. turn onto a lightly floured work surface and bring pastry together
  4. form a disc wrap in plastic wrap, refrigerate for 30 minutes (or overnight)
  5. Roll out pastry on a lightly floured surface to 3mm thick and linea 28cm-diameter loose-bottomed tart tin*
  6. refrigerate for 1 hour
  7. blind bake for 8-10 minutes, remove paper and weights and bake until dry and crisp (8-10 minutes)

(*) I have to learn how to roll the pastry so at the moment I line the pastry directly in the tin before refrigerate

Pastry cream

  1. Warm milk and vanilla at 80°
  2. in a bowl, mix eggs and sugar, then the flour
  3. pour the milk in the egg mixture spoon by spoon
  4. in a saucepan, warm the mixture until reach a thick consistency*

(*) I haven't found a good method for that. First time I bring to boil but clumps has formed. Second time it was perfect but it takes HALF AN HOUR stirring at low heat!

Caramelized apples

  1. In a saucepan, caramelize the sugar*
  2. add the apples, coat with caramel

Assembling

  1. Pour the pastry cream on the crust
  2. align apples like here.

Un paio di settimane fa ho mi sono iscritto alla biblioteca vicino al mio ufficio. Quindi ho iniziato a dare un'occhiata ai libri disponibili. Ovviamente nella sezione culinaria. :D

Cercavo alcuni libri scritti dai miei cuochi preferiti come Ad hoc at home di Mr. Thomas Keller e The fat duck cookbook del prof. Heston. :)

Purtroppo erano in prestito. Così ho iniziato a leggere l'introduzione del The Gavroche cookbook di Michel Roux Jr, interessante e stimolante. Mmm cucina francese, non la conosco molto... così ho iniziato a sfogliare French Lessons di Justin North: un sacco di ricette di base tradizionali che non ho ancora fatto! Crème caramel, creme brulee, lemon tart... Così la settimana scorsa ho preso in prestito un altro libro di Raymond Blanc (Raimondo Bianco? :D) e ho fatto la sua lemon tart.

Comunque sono stato ispirato a farla dopo aver visto quella di Heston. Che figata. :)

La ricetta è qui (in inglese)

Ingredienti Mise en place per una tortiera di 24 cm di diametro

  • burro a temperatura ambiente a cubetti: 120 g
  • zucchero a velo: 75 g
  • tuorli d'uovo: 2 + 1 (60 g)
  • farina: 250 g
  • uova: 5 (250 g)
  • zucchero: 150 g
  • succo di limone: 85 g
  • buccia di limone: 2 cucchiai (15 g)
  • panna: 150 g

Preparazione

  1. in una ciotola, lavorare il burro e lo zucchero a velo fino ad ottenere una crema
  2. incorporare 2 tuorli
  3. aggiungere la farina, lavorare con la punta delle dita fino ad ottenere un insieme di briciole (io ho usato un coltello e ho simulato l'impastatrice :D)
  4. formare una palla
  5. impastare per massimo 30 secondi su un piano leggermente infarinato
  6. avvolgere nella pellicola, frigo 30 minuti (siccome faccio disastri quando stendo la pasta frolla l'ho stesa direttamente nella tortiera schiacciandola con le dita, poi ho messo in frigo)
  7. stendere la pasta e ricoprire la tortiera
  8. fare dei buchi con la forchetta (altrimenti lievita), coprire con la carta forno o foglio di alluminio, riempire con riso o fagioli o quello che volete ed infornare per 10 minuti
  9. rimuovere dal forno, togliere il "peso", spennellare con il rimanente tuorlo ed infornare per altri 20 minuti
  10. per la crema: mescolare tutti gli ingredienti e riscaldare con un pentolino o a bagnomaria (60 gradi io)
  11. versare la crema sulla pasta frolla, altri 25 minuti in forno fino a quando la crema raggiunge i 70 gradi (Heston docet)
  12. fatta.

L'angolo della cultura

La cottura in bianco è quando si cuoce la pasta frolla prima di riempirla con la crema. Di solito si buca la pasta in modo tale che non cresca e lieviti durante la cottura. Una volta stesa nella tortiera si copre la pasta frolla con un foglio di alluminio o carta forno e si riempie con dei pesi come riso, fagioli (crudi! :)) o monete (trasmettono meglio il calore dice prof Heston :)) e si inforna. Dopo la prima fase (dipende dalla ricetta) si rimuovono i "pesi" e la carta e si inforna per la seconda volta, in modo tale da creare una bella crosta dorata.

Tutto questo perché se il ripieno è troppo liquido e si cuoce la pasta frolla "cruda" si rischia che resti molliccia e non cuocia perfettamente.

The little history

A couple of weeks ago I subscribed to the library close to my office. Then, I take a look at the books available. Obviously in the cooking section. :D I was looking for some books written by my favourite chefs like Mr. Thomas Keller's Ad hoc at home and prof. Heston's The fat duck cookbook. :)

Unfortunately they were on loan. So I started reading the introduction of The Gavroche cookbook by Michel Roux Jr, interesting and inspirational. Mmm French cooking, I don't know much about it... so I started to flick through another one French Lessons by Justin North. Wow, so many traditional recipes that I haven't already cooked: creme caramel, creme brulee, lemon tart... So last week I borrowed another book by Raymond Blanc and I baked his lemon tart.

Anyway I was inpired to make it after I have seen Heston's. Very cool. :)

Lemon tart

Ingredients Mise en place for a 24 cm round tart tin

  • unsalted butter at room temperature, diced: 120 g
  • icing sugar: 75 g
  • egg yolks: 3
  • flour: 250 g
  • eggs: 5 (250 g)
  • sugar: 150 g
  • lemon juice: 85 g
  • lemon zest: 2 tbs (15 g)
  • cream: 150 g

Method

  1. in a large bowl with a spatula or wooden spoon cream butter and sugar
  2. beat in 2 of egg yolks
  3. add flour, with fingertips rub butter mixture to form breadcrumbs
  4. add water, form a ball
  5. knead pastry in a floured surface for 30 seconds, not overwork
  6. refrigerate 30 minutes
  7. roll pastry and line the tin
  8. blind bake (see here) 10 minutes
  9. remove weights from the shell, brush with remained egg yolk, bake for 20 minutes
  10. mix together ingredients, warm gently in a saucepan
  11. fill the shell and bake for 25 minutes
  12. done.

The culture corner

Blind baking is when the pastry is cooked before fill it with the filling. Usually after rolling and line the cake tin the bottom is priked with a fork in order to prevent the pastry to rise. Then the pastry is covered with aluminium foil or graseproof paper. Then the shell is filled with some weights always in order to prevent the pastry to rise, usually raw beans, rice or coins (these transmit better the heat). After the amount of time indicated in the recipe (it depends on the amount of pastry, the dimension of the cake tin etc.) the "weight" is removed and the pastry is baked again so a nice gold crust will form.

This process is necessary for some recipes because if the filling is too liquid and the pastry is cooked raw it will be soggy and not completely cooked.

Che cos'è, una pasta in bianco?! Si. Voglio dire, è pasta al pomodoro in bianco!

Perchè è bianca? Perché l'acqua di pomodoro superfiltrata! È tutto spiegato qui, in uno dei miei foodblog (se così si può chiamare) preferiti. Soprattutto quando riesco a riprodurre gli esperimenti. ;)

Devo dire che l'acqua di pomodoro non ha reso molto con la pasta. Devo trovare un modo per usarla meglio...

What's that? A white pasta?! Yes. I mean, not really, it's a tomato pasta! ;)

Why white? Because I used a super-filtered juice of tomato! How? It's all explained here.

Acqua di pomodoro / Tomato water

The recipe

Ingredients

  • Fresh tomatoes: 285 g (2)
  • Agar agar: 0.5 g (I think...)

Method

  1. Prepared bowl with cold water and ice
  2. Bring a pot with water to a boil
  3. Cut a cross on the bottom of tomatoes
  4. Boil tomatoes for 20-30 seconds
  5. Place tomato in the bowl with cold water
  6. Stir agar in 50 g of water and bring it to boil
  7. Peel tomatoes
  8. Puree tomato using a blender
  9. Add agar water in tomato juice, mix well
  10. Freeze tomato juice (I used a silicon muffin tray)
  11. Once frozen thaw tomatoes in the fridge (I let them overnight) on a coffee filter on the top of a cup
  12. Enjoy your tomato juice!

Domenica mi sono preparato il piatto icona che non manca mai in un fast-food> l'hamburger!

La ricetta è per il contest "Migliora le tue foto di food" organizzato dalla brava fotografa Agnese:

Agnese, le foto nella versione italiana sono le jpeg originali, quelle nella versione inglese quelle post-prodotte da me. Scegli quella che vuoi per le modifiche (se le fai tutte e 4 non mi offendo mica, eh! ;-))e buon divertimento!

Hamburger

La ricetta

Ingredienti

  • Macinato di manzo: 140 g
  • Cipolla: 50 g
  • Sale, pepe, cumino, spezie a piacere
  • Sottilette: 1 (21 g)
  • Pane: 120 g

Preparazione

  1. Tagliare la cipolla onion; metà va nell'hamburger, quindi deve essere molto fine, l'altra come guarnizione, quindi potete lasciare i pezzi più grossi
  2. Tagliare il panino :)
  3. In una ciotola, mescolare la carne con la cipolla tritata, sale, pepe, cumino e spezie a piacere (ho usato erbe miste essiccate)
  4. Formare l'hamburger formando una palla che poi si appiattisce con l'aiuto delle mani (io ho usato un coppapasta)
  5. Scaldare una padella come fanno qui (ho usato una antiaderente)
  6. Quando la padella è calda aggiungete un poco d'olio se non è antiaderente
  7. Cucinare l'hamburger girandolo ogni minuto (forse è meglio ogni 20-30 secondi), ci ho messo 4 minuti
  8. Togliere l'hamburger dal fuoco e lasciarlo riposare su un piatto
  9. Nel frattempo, soffriggere la cipolla, sciogliere la sottiletta e scaldare il pane nella padella nel grasso della carne
  10. Una volta che gli ingredienti sono pronti, assemblare il panino come più vi piace e buon appetito!

Sunday I cooked one of the classical icon that you can find in every fast-food: hamburger!

Hamburger

The recipe

Ingredients

  • Bread: 150 g
  • Beef mince: 140 g
  • Onion: 50 g
  • Processed cheese: 1 slice (21 g)
  • Salt, pepper, cumin, spices

Method

  1. Mince the onion
  2. Slice the bread
  3. In a bowl, combine meat with half of the onion, salt, pepper, cumin and spices at our taste (I used mixed herbes)
  4. Form the patty by forming a ball, then press it with your hands in order to flatten (I used a steel ring of 10 cm of diameter)
  5. Heat a fry pan like here
  6. If you want add little bit of oil
  7. Fry the patty by turning it every minute, it takes 4 minutes for me
  8. Remove the patty from the pan and let it rest
  9. In the meanwhile in the same fry pan, fry onion on the same pan in the fat of the meat, melt the slice of cheese and warm the bread
  10. Once the ingredients are ready form the sandwich as you like and enjoy!

Biscotti con burro al limone / Lemon butter biscuits

La storiella

Devo dire che, IMHO, il limone nei dolci dá quel tocco particolare che fá la differenza e distingue un buon risultato da un ottimo risultato. Ho goduto di questo fatto per la crema che ho usato per farcire questi semplici biscotti fatti con una frolla particolare, che non prevede le uova nell'impasto. Come ogni volta che provo a fare una ricetta per la prima volta (scusate la ripetizione... ;-)) qualcosa è andato storto: ho cotto i biscotti un paio di minuti di troppo e si sono "abbronzati" troppo!

Credo che a cottura giusta sarebbero stati leggermente meno tostati e non dico morbidi, ma di quella giusta consistenza per la quale puoi sia mangiarli sia inzupparli (nel tè... ma devo ancora capire se è previsto dal galateo o no... ;-)).

Questa doveva essere la ricetta perfetta per il contest "È sempre l'ora del tè". Volevo creare una ricetta complicatissima che potesse impressionare Tuki, l'organizzatrice del contest, nonchè una delle foodblogger da cui ho molto da imparare per quanto riguarda l'arte pasticcera e della fotografia. Ma forse è meglio che mi presenti con una ricetta semplice e delle foto "difettose". Siccome i premi non arrivano in Australia, baratto un eventuale premio con una consulenza della ciliegina sulla food photography!! Va bene prof? ;-)

Biscotti con burro al limone / Butter lemon biscuit

La ricetta

Dall'allegato "Baking favourites" della rivista Food Ideas che ho trovato per caso non ricordo dove... ;-)
Per 60 biscotti, che assemblati 2 a 2 fanno 30. :D

Ingredienti

  • Burro non salato a temperatura ambiente (tirarlo fuori dal frigo 2 ore prima di preparare la ricetta o scaldare 15 secondi al microonde, anche se non è la stessa cosa...)
  • Estratto di vaniglia: 5 ml
  • Zucchero a velo: 160 g
  • Farina 00: 300 g
  • Uova: 2 (100 g)
  • Zucchero: 110 g
  • Buccia grattugiata di un limone
  • Succo di limone: 60 ml
  • Burro: 30 g

Preparazione

  1. Foderare 2 teglie con la carta forno
  2. Montare il burro e la vaniglia utilizzare delle fruste elettriche. Aggiungere lo zucchero a velo e montare fino ad ottenere un composto uniforme. Incorporare la farina al fine di ottenere un impasto omogeneo.
  3. Versare il composto su una superficie leggermente infarinata ed impastare a mano formando una palla. Avvolgere con la pellicola trasparente, far riposare in frigo per 30 minuti.
  4. Preriscaldare il forno a 180°C o 160°C se ventilato
  5. Dividere l'impasto in 60 palline, riporle sulle teglie
  6. Schiacciare le palline utilizzando una forchetta (per evitare che la forchetta si attacchi all'impasto immergerla frequentemente in un contenitore di acqua)
  7. Infornare per 12 minuti (io più di 30!!!)
  8. Far raffredare i biscotti su una graticola
  9. Per il burro al limone scaldare uova, zucchero, burro, succo e buccia di limone in un pentolino a fuoco medio, mescolando continuamente fino ad ottenere una consistenza spalmabile (io ho scaldato per più di 30 minuti controllando che la temperatura non superasse gli 85 gradi per evitare che le uova non coagulassero)
  10. Rimuovere dal fuoco e far raffreddare completamente mescolando di tanto in tanto (io ho riposto su un piattino e ho lasciato riposare senza mescolare)
  11. Unire una coppia di biscotti utilizzando un cucchiaino di burro al limone

The little story

I have to say that, IMHO, lemon on sweets give the particular taste that makes the difference between a good and a very good final result. I appreciate a lot the use of lemon for the cream used for this simple biscuits that use a particular pastry shortcrust that is made without eggs. As always something wrong happened as every time I test a recipe for the first time: I baked the biscuits a couple of minutes more than the necessary, so they browned too much!

This recipe should be the perfect recipe for the context . I wanted to create stunnings recipe and photo in order to impression Tuki the organizer of the context, since she's one of my favourite perfectionist-pastry-foodblogger. By the way, since I don't consider myself at a good level as cook and photographer I present a very simple recipe and photos with defects (white balanceeeee!!!!) that represent my actual level that I want to improve!

Biscotti con burro al limone / Butter lemon biscuit

The recipe

From Australian "Baking favourites" of Food Ideas's magazine. Make 60 biscuits.

Ingredients

  • Unsalted butter at room temperature: 250 g
  • Vanilla extract: 1 tsp
  • Pure icing sugar: 160 g
  • Plain flour: 300 g
  • Eggs: 2 (100 g)
  • Caster sugar: 110 g
  • Grated rind of a lemon
  • Lemon juice: 60 g
  • Butter: 30 g

Method

  1. Line 2 baking trays with baking paper. Using an electric mixer, beat butter and vanilla until pale.Add icing sugar and beat until light and fluffy. Add flour and mix to form a dough.
  2. Turn out onto a lighty floured surface and gently knead to form a ball. Wrap in plastic wrap and chill for 30 minutes.
  3. Preheat oven to 180°C or 168°C fan. Roll teaspoons of dough into balls. Place on trays. Press with a fork (dip the fork in water to stop it sticking)
  4. Bake for 12 minutes, until coloured (I baked for 30 minutes!)
  5. Transfer to a rack to cool
  6. To make lemon butter, heat eggs, sugar, lemon juice and butter in a saucepan on medium, stirring constantly, for 5-10 minutes to boil, until thick. (I cooked for more than 3 minutes, paying attention to remain under 85°C to avoid eggs coagulation).
  7. Remove from heat and cool completely, stirring occasionally (I didn't stir :-))
  8. Sandwich together pairs of biscuits using half tsp of lemon butter each. Serve.

La storiella

Ho provato a fare questa torta la settimana scorsa dopo aver letto la ricetta su un libretto di ricette del supermercato. È una ricetta interessante perchè usa una tecnica che non ho mai provato prima, ma che è molto comune per la preparazione delle torte: montare il burro con lo zucchero in modo da formare la struttura che incorpora aria. Inoltre la pastella è abbastanza liquida da poter essere utilizzata con una sac-a-poche.

Risultato finale ottimo, forse perché mi ricorda la crostata alla marmellata di fragole con l'inconfondibile impasto che profumava di limone che mi faceva la mamma da piccolo. Che buona... ;-)

La ricetta

Per una tortiera di 23 cm di diametro.

Ingredienti

  • Burro a temperatura ambiente: 185 g
  • Zucchero: 220 g
  • Scorza grattuggiata di un limone
  • Cannella in polvere: 5 g
  • Farina 00: 300 g
  • Marmellata di lamponi (ho usato una mista)

Preparazione

  1. Preriscaldare il forno a 180°C
  2. Imburrare o ricoprire con la carta forno la tortiera
  3. Con un frullino elettrico (o le fruste della planetaria) montare il burro per un minuto
  4. Aggiungere lo zucchero e montare fino ad ottenere un composto spumoso
  5. Incorporare la scorza di limone, la farina setacciata con la cannella (usando la foglia della planetaria, altrimenti a mano visto che il composto è troppo duro per il frullino elettrico)
  6. Versare il composto in una sacca da pasticcere con una bocchetta dentellata
  7. Ricoprire il fondo della tortiera disegnando una spirare a partire dal centro
  8. Disegnare una linea sul bordo in modo da creare il "contenitore" per la marmellata
  9. Spalmare la marmellata sopra la pastella (l'ho scaldata al microonde per renderla un po' più liquida e facile da spalmare)
  10. Disegnare il reticolo della crostata con la pastella rimasta utilizzando la sac-a-poche
  11. Infornare per 30-40 minuti

The little story

I tried to bake this cake last week after reading the recipe on foodlovers.com. It was an interesting recipe because it use a tecnique that I've never tried before, but it's very common for a cake batter: whipping butter at room temperature with sugar in order to create the soft structure that incorporate air. Furthermore in this recipe the batter is enough liquid to use it on a piping bag, it's not like the pastry shortcrust.

The final result is amazing, maybe because it reminds me the tart with strawberry jam and the dough that smelt of lemon that my mother baked when I was a child.

The recipe

For a cake tin of 23 cm.

Ingredients

  • Butter at room temperature: 185 g
  • Sugar: 220 g
  • Grated rind of a lemon
  • Cinnamon: 5 g
  • Flour: 300 g
  • Raspberry jam (I used mixed jam)

Method

  1. Preheat the oven to 180°C
  2. Line and grease a round tart/cake tin
  3. With electric whisks beat the butter for a minute
  4. Add the sugar and beat until pale and fluffy
  5. Stir in the rind of the lemon, sifted flour and cinnamon
  6. Using a piping bag cover the bottom of the cake tin drawing a spiral from the center
  7. Draw another line on the border the tin in order to create the container for the jam
  8. Spread the jam on the top of the batter (I warmed the jam in the microwave in order to make more liquid for spreading)
  9. With the remaining batter draw the grid on the top of the tart using the piping bag
  10. Bake for 30-40 minutes until golden
  11. Enjoy!

La storiella

A volte sono sorpreso dalla semplicità di certi piatti tradizionali. Come questi lamington, uno dei tipici dolcetti australiani. Dei quadrotti di pan di spagna imbevuti di uno strato di cioccolato e spolverati con farina di cocco. Penso siano abbastanza secchi da richiedere qualcosa di liquido che compensi l'effetto "soffocamento"... :D Una tazza di tè o caffé con latte credo sia perfetto. Anche tagliarli a metà e spalmarli con uno strato di marmellata è una buona soluzione. :)

La ricetta

Per 5 lamingtons. Non è la ricetta originale!

Ingredienti

  • Pan di spagna (5 cm di altezza): 500 g
  • Latte: 200 g
  • Cacao amaro in polvere: 20 g
  • Zucchero: 20 g
  • Farina di cocco: 20 g

Preparazione

  1. Tagliare il pan di spagna a quadrotti Pan di Spagna / Sponge cake
  2. Disporre il cocco in un piatto liscio
  3. In un pentolino a fondo spesso mescolare il latte con il cacao e lo zucchero in modo da eliminare i grumi
  4. Sobbollire il composto in modo da ridurlo ed ottenere una consistenza densa
  5. Con l'aiuto di due forchette prendere un quadrotto di pan di Spagna, immergerlo nel cioccolato in modo da ricoprirlo completamente
  6. Ripetere l'operazione nel piatto con la farina di cocco
  7. Buon appetito!

The little story

Many times I'm impressed of the simplicity of certains traditional dishes. Like these lamingtons, one of the typical Australian sweets. Only sponge cake with a layer of chocolate dusted with coconut flour. I think they're enough dry to require something liquid that compensate the "choking-effect": a cup of tea or coffee with milk is perfect in my opinon. Slice them in half and spread a layer of jam is a good solution as well. :)

The recipe

For 5 lamingtons. It's not the original recipe!

Ingredients

  • Sponge cake: 500 g
  • Milk: 200 g
  • Cocoa powder: 20 g
  • Sugar: 20 g
  • Coconut flour: 20 g

Preparation

  1. Cut the sponge cake in squares Pan di Spagna / Sponge cake
  2. Put the coconut flour on a flat plate
  3. Stir cocoa powder and the sugar in milk in a heavy bottom pan, until all lumps
  4. Bring the milk to a simmer and reduce in order to reach a thick consistency
  5. Using 2 forks put a sponge cake square in the pan with the chocolate and roll it until it's completely covered
  6. Roll the lamington on the coconut flour
  7. Repeat for all the the lamingtons and enjoy!

La storiella

Ci sono molti cibi ed ingredienti che devo ancora provare: la bottarga, le rane, fish & chips (vero!) ecc. Durante le vacanze italiane stavo comprando alcuni ingredienti per una cena al supermercato, quando ho visto un prodotto che appare molto spesso in molti ristoranti di medio-alto livello: il foie gras. Ok, proviamolo! 8 euro per 40 grammi sono un buon prezzo per un ingrediente da gourmet, o no?

Come prepararlo? Ho deciso di adagiarlo sopra ad un buon risotto, visto che è un elemento grasso e il risotto ha bisogno di questa componente per la mantecatura. Non l'ho cucinato, solo tirato fuori dal frigo 30 minuti prima di servirlo, come indicato nelle istruzioni per l'uso. ;-)

Che dire? È un cibo grasso con una consistenza particolare. È simile al burro a temperatura ambiente ma meno compatto... Non sono riuscito a finire i 40 grammi , penso che 20-30 siano sufficienti per una porzione.

La ricetta

Ingredienti

  • Brodo di pesce (o acqua salata): 500 g
  • Seppie precotte: 125 g (ho usato una porzione surgelata che la mamma aveva preparato cucinando le seppie nel loro nero)
  • Riso (Carnaroli): 60 g
  • Cipolla: 40 g
  • Foie gras: 40 g
  • Vino bianco secco: 30 g
  • Burro: 6 g

Preparazione

  1. Estrarre dal frigo il foie gras 30 minuti prima di utilizzarlo
  2. Portare ad ebollizione il brodo
  3. Tritare finemente la cipolla
  4. Scaldare il burro in una pentola dal fondo spesso a fuoco medio-alto
  5. Aggiungere il riso e tostarlo per un paio di minuti
  6. Aggiungere il vino e lasciare evaporare l'alcol
  7. Aggiungere il brodo in modo da ricoprire il riso
  8. Dopo un minuto aggiungere la cipolla, aggiungere altro brodo se necessario
  9. Continuare la cottura del riso aggiungendo brodo quando il precedente viene assorbito
  10. 5 minuti prima della cottura del riso (ci mette 15-20 minuti, io non guardo l'orologio ma assaggio sempre) aggiungere le seppie nel loro nero
  11. Quando il riso è cotto impiattarlo utilizzando un coppapasta
  12. Posizionare il foie gras sopra al riso
  13. Aspettare un paio di minuti, quindi sformare e buon appetito!

The little story

There are a lot of foods and ingredients that I've never tasted in my life: bottarga, macarons, fish and chips (it's true! :-) etc. During the Italian holidays I was buying some ingredients for a dinner at the supermarket, when I saw a food that appears very often in many high-level restaurant: foie gras. Ok, let's test it! 8 euro for 40 grams is a good price for a gourmet ingredient, isn't it?

So I had to decide how to eat it... I choose to put it on the top of a good risotto, since the foie gras is fat and the risotto needs something fat for the "mantecatura". I didn't cooked it, only put it out of the fridge 30 minutes before eating and placed on the top of the risotto before serving.

What can I say? It's a fatty food with a particular consistency. It's similar to a mousse, but more solid. I wasn't able to finish all the 40 grams, I think 20-30 grams are enough for a person.

The recipe

Ingredients

  • Fish stock (or salty water): 500 g
  • Frozen pre-cooked squid: 125 g
  • Rice (I used a rice for risotto, Carnaroli): 60 g
  • Onion: 40 g
  • Foie gras: 40 g
  • White dry wine: 30 g
  • Butter: 6 g
  • Squid's black ink

Preparation

  1. Put the foie gras at room temperature before serving
  2. Bring stock to boil
  3. Mince the onion
  4. Heat the butter in a heavy-bottom pan at medium-high heat
  5. Add the rice and toast it for a couple of minutes
  6. Add the wine and let the alcool evaporates
  7. Add stock to cover the rice
  8. After 1 minutes add the onion, add stock if necessary
  9. Continue to cook the rice by adding stock when the previus is absorbed
  10. 5 minutes before the rice is cooked (it takes 5-20 minutes, I always test it) add squids and the black ink
  11. When the rice is cooked place it on a plate using a circle shape and put the foie gras on the top
  12. Wait a couple of minutes, then remove the circle shape and enjoy!

Ho giocato un po' con la temperatura del colore nella foto sotto, ha un bell'effetto vintage (come si chiama sto effetto?).

La storiella

Dopo aver fatto il pan di Spagna ho deciso di usarlo, ovviamente. In che modo? Non ho ancora scoperto se vanno usati i savoiardi nella ricetta originale del tiramisù. Penso sia una buona alternativa utilizzare il pan di Spagna fatto in casa, così ho utilizzato il mio per rivisitare questo classico. Ho pure usato la ricotta al posto del mascarpone per alleggerire il tutto. Ovviamente non è la ricetta originale, ma una delle tante rivisitazioni che si possono trovare in rete!

La ricetta

Con queste quantià ho preparato 3 porzioni singole servite in bicchieri singoli. Potete aggiungere rhum al caffè se vi piace. Per una migliore consistenza suggerirei di aggiungere del cioccolato tritato alla crema.

Ingredienti

  • Pan di Spagna: 100 g
  • Ricotta: 400 g
  • Cacao amaro in polvere: 50 g
  • Caffè 50 ml
  • Zucchero: 40 g

Preparazione

  1. In una ciotola mescolare la ricotta e lo zucchero con le fruste fino ad ottenere un composto cremoso
  2. Versare 1/4 della crema sul fondo della tortiera o dei bicchieri
  3. Spolverare di cacao
  4. Coprire con 1/3 del pan di Spagna
  5. Bagnare la superficie del pan di Spagna con il caffè usando un pennello da cucina, cercando di non inzupparlo troppo
  6. Ripetere la procedura per altri 2 strati, l'ultimo deve essere di crema
  7. Far riposare in frigorifero per un paio d'ore prima di servire

L'angolo della cultura

Oggi qualche riflessione fotografica. Nelle ultime foto uso sempre la solita regola di composizione. Il soggetto principale viene posizionato nel terzo in basso a sinistra o a destra, seguendo appunto la regola dei terzi. Poi per bilanciare la composizione piazzo uno o più elementi nella parte opposta in alto. Quindi imposto l'apertura tra 1.8 e 4. Ho notato che con apertura 1.8 si genera un effetto troppo sfocato, quindi preferisco un'apertura tra 2.2 e 2.8. In questo modo si ha più fuoco sull'intero soggetto, per esempio si mette a fuoco non solo sul bordo del bicchiere, ma l'intero (o quasi) bicchiere.

Un'altra cosa da considerare è la prospettiva, in base all'altezza in cui si posiziona la fotocamera. Più è bassa più sfondo si vede. In questo caso è importante togliere gli elementi inutili per la composizione. Un'operazione che non sono bravo a fare... ;-)

The little story

After baking the sponge cake I decided to use it. In which way? I haven't discovered yet if savoiardi should be used as the base the original recipe of tiramisù. I think a good alternative to them are homemade sponge cake, so I used mine for this dessert. I used ricotta instead of mascarpone for a lighter version. This is not the original version, but a revisitation. You can find billion of personalized version of tiramisù on the internet...

The recipe

With this quantities I prepared 3 single portions served on a glass, each with 3 layers of sponge cake and cream. You can add rhum or other flavour in the coffee as your taste. To give a better texture I suggest to add crushed dark chocolate to the cream.

Ingredients

  • Sponge cake: 100 g
  • Ricotta: 400 g
  • Cocoa powder: 50 g
  • Coffee: 50 ml
  • Sugar: 40 g

Preparation

  1. In a bowl, whisk the ricotta with the sugar until creamy and fluffy
  2. Spread 1/4 of the cream on the bottom of the cake-tin or glass
  3. Dust with cocoa powder
  4. Cover the cream with 1/3 of the quantity of the sponge cake. (cut as your taste)
  5. Brush the sponge cake with the coffee only on the top, don't overwet
  6. Repeat the procedure, the top layer should be of cream
  7. Rest in the fridge for a couple of hours before serving.

Today photography tips. In my last shoots I always use the same composition rule. The main subject is positioned on the right or left bottom third of the frame, following the rule of thirds. Then to balance the composition I put one or more elements on the top-opposite side of the main subject. Then I set the aperture between 1.8 and 4. I noticed that 1.8 produce a too much blurry effect, so my favourite range is between 2.2 and 2.8. In this way you have a more bigger focus on the subject, for example not only the border of the glass but the entire glass.

Then is important to evaluate the perspective, I mean the high at which you position the camera. The more the camera is near the plan the more background you can see. In this case is important to setup the background in a way to shade unuseful elements. An operation that I am lazy to do... ;-)

La storiella

Fatta un'altra ricetta della lista "da fare". Semplice, facile, veloce e buona. Li ho appena sfornati e offerti ad alcuni amici dell'ostello (ovviamente dopo averli fotografati e pesati ;-)). Mi piace condividere e mangiare assieme!

La ricetta

Ho seguito questa ricetta (senza usare le gocce di cioccolato), presa da uno dei miei foodblog italiani preferiti. Specialmente per le foto paradisiache. ;-) Ma avevo consultato anche questa, questa, questa e questa!

Ingredienti per 9 scones o 12 piccoli

  • Farina autolievitante: 250 g
  • Latte intero: 150 g
  • Burro: 75 g
  • Zucchero: 30 g
  • Pizzico di sale

Preparazione

  1. Preriscaldare il forno a 180°
  2. Preparare una teglia con la carta forno
  3. Mettere farina, zucchero e il pizzico di sale in una ciotola
  4. Tagliare il burro freddo e incorporarlo nella farina con la punta delle dita fino ad ottenere "briciole". Bisogna essere veloci per non scaldare il burro.
  5. Aggiungere il latte e mescolare con una forchetta fino ad assorbimento
  6. Stendere l'impasto con un mattarello ad uno spessore di circa 2 cm
  7. Ricavare 9 o 12 pezzi. Io li ho ritagliati usando un bicchiere di 3 cm di diametro.
  8. Disporli sulla teglia e infornare per 15-20 minuti fino a che iniziano a dorare.
  9. Degustarli caldi!

Gli scones sono originari della Scozia, ma sono consumati in tutti i paesi anglofoni (o anglosassoni? ;-)). Sono solitamente venduti con forma tonda ma possono essere anche triangolari o quadrati. Possono essere dolci o salati. In alcune famiglie che se li fanno in casa viene utilizzata la ricetta "segreta" che viene tramandata.

The little story

Another recipe of the list "to do" done. Simple, easy, fast, yummy. I've just baked them and offered to some people from the hostel. I like sharing and enjoying food!

The recipe

I followed this recipe without using chocolate. Probably my favourite Italian foodblog. Especially for the heavenly photos. ;-)

Ingredients for 9 scones or 12 little

  • Self-raising flour: 250 g
  • Milk: 150 g
  • Butter: 75 g
  • Sugar: 30 g
  • Pinch of salt

Preparation

  1. Preheat the oven at 180°
  2. Prepare a baking tin with greaseproof paper
  3. Put the flour, sugar and the pinch of salt in a bowl
  4. Cut butter in little piecies and rub in the flour with fingertips until mixture become like breadcrumbs. You have to be be quick for not warm the butter
  5. Add the milk and mix with a fork
  6. Put the dough on a table and spread with a rolling tin at 2 cm thick
  7. Cut in 9 or 12. I used a glass with 3 cm of diameter
  8. Baked for 15-20 until they start become brown
  9. Enjoy the scones warm!

The culture corner

Scones are original from Scotland, but they're eaten in all Anglo-Saxon countries. They're usually sold in round shape, but they could be triangular or square. They could be sweet or savoury. Some families that bake scones homemade use their "secret" recipe.

Ok, questa volta quantità, non qualità. ;-) Ero a casa dei miei amici e ho fatto qualche foto prima di mangiare, ma poca luce e niente treppiede, quindi...

La storiella

Ieri sera abbiamo organizzato una bella cena (qui le foto e qui il racconto!) nell'appartamento del mio amico Milo. Lui ha preparato la pizza, Mirco gli arancini, mentre io i muffin al cioccolato e... la mia prima New York style cheesecake!

Siccome ho iniziato a preparare la torta alle 4 e mezza del pomeriggio e la cena iniziava alle 7, non ho avuto il tempo di seguire questa ricetta alla lettera. Infornare per 1 ora e mezza, raffreddare nel forno per due ore e 4 in frigorifero, non esiste!

Non importa, il risultato finale è stato eccellente! Forse un po' troppo salata e troppo burro nella base di biscotti, ma che goduria di torta!

La ricetta

Ho seguito questa ricetta trovata su taste.com.au (figo sto sito), ma non ho preparato la copertura, visto che la New York style non la prevede... almeno mi pare. ;-)

Ingredienti

  • Biscotti dolci secchi (tipo Arnott Nice): 250 g
  • Burro: 125 g
  • Cream cheese (formaggio cremoso): 750 g (ho usato 500 g di Philadelphia cream cheese block e 250 g di Lite cream cheese)
  • Zucchero: 215 g
  • Estratto di vaniglia: 1/2 tsp (2.5 ml)
  • Buccia di limone grattugiata (ho usato estratto di limone): 2 tsp (10 ml)
  • Farina: 2 tsp (10 ml) (Dimenticata :-))
  • Uova: 4 (220 g)
  • Sour cream: 300 ml

Preparazione

  1. Preriscaldare il forno a 160°C. Foderare con la carta forno una tortiera a cerniera di 23 cm di diametro (ho usato una da 24 cm usando solo la carta forno sul fondo)
  2. Tritare i biscotti e aggiungere il burro fuso. Distribuire sul fondo della tortiera comprimendo con il fondo di un bicchiere. Mettere a raffredare in frigo per 30 minuti. Cheesecake base
  3. Nel frattempo usare le fruste elettriche (grazie Milo ;-)) per sbattere il formaggio cremoso, zucchero, vaniglia e buccia del limone in una ciotola grande fino ad ottenere una crema. Incorporare la farina. Aggiungere un uovo alla volta fino al completo assorbimento. Aggiungere la sour cream, sbattere fino ad ottenere una crema uniforme. Cheesecake cream
  4. Riempire la tortiera con la crema ed infornare per 1 ora 1/4, 1 ora e mezza (io 1 ora e 20). Spegnere il forno e lasciarvi la torta con lo sportello socchiuso per 2 ore o fino a completo raffreddamento. Raffreddare in frigo per 4 ore.

Ok, this time quantity, not quality. ;-) I was at my friend's apartment and I took a lot of photos before eating, but low light, no tripod, so...

The little story

Yesterday evening we organized a nice dinner (here the photos!) at my friend's apartment. He cooked pizza, another friend arancini, whilst I prepared chocolate muffins and... my first New York cheesecake!

Since I started preparing the cake at 4.30 PM and the dinner started at 7 PM have no time to follow the recipe. Baking for 1 hours and a half, leave the cake the oven for 2 hours and chill in the fridge for 4 hours, no way!

Nevermind, the final result was AMAZING!!! Maybe a litte bit salty and too much butter on the base, but what a delicious cake!

The recipe

I follow this recipe on taste.com.au, but I didn't put the topping since the original New York style cheesecake doesn't have it.

Ingredients

  • 250g pkt plain sweet biscuits (such as Arnott's Nice)
  • 125g unsalted butter, melted
  • 750g cream cheese, at room temperature (I used 500 g of Philadelphia cream cheese block and 250 g of Lite cream cheese
  • 215g (1 cup) caster sugar
  • 1/2 tsp vanilla extract
  • 2 tsp finely grated lemon rind (omitted, I used lemon extract)
  • 2 tbs plain flour (omitted, I forgot it!)
  • 4 eggs
  • 300ml sour cream

Preparation

  1. Preheat oven to 160°C. Line the base of a 23cm (base measurement) springform pan with non-stick baking paper.
  2. Place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until well combined. Transfer to the lined pan. Use a straight-sided glass to spread and press the biscuit mixture firmly over the base and side of pan, leaving 1cm at the top of the pan. Cover with plastic wrap and place in the fridge for 30 minutes to chill. Cheesecake base
  3. Meanwhile, use an electric beater to beat the cream cheese, sugar, vanilla and lemon rind in a large bowl until just combined. Beat in the flour. Add the eggs, 1 at a time, beating well after each addition until combined. Stir in the sour cream until just combined. Cheesecake cream
  4. Pour the cream cheese mixture into the base. Place the pan on a baking tray and bake for 1 1/4-1 1/2 hours or until just set in the centre. Turn oven off. Leave the cheesecake in oven, with the door ajar, for 2 hours or until cooled completely (this will prevent cheesecake from cracking). Place in the fridge for 4 hours to chill.
