Che cos'è, una pasta in bianco?! Si. Voglio dire, è pasta al pomodoro in bianco!
Perchè è bianca? Perché l'acqua di pomodoro superfiltrata! È tutto spiegato qui, in uno dei miei foodblog (se così si può chiamare) preferiti. Soprattutto quando riesco a riprodurre gli esperimenti. ;)
Devo dire che l'acqua di pomodoro non ha reso molto con la pasta. Devo trovare un modo per usarla meglio...

The little history
What's that? A white pasta?! Yes. I mean, not really, it's a tomato pasta! ;)
Why white? Because I used a super-filtered juice of tomato! How? It's all explained here.

The recipe
Ingredients
- Fresh tomatoes: 285 g (2)
- Agar agar: 0.5 g (I think...)
Method
- Prepared bowl with cold water and ice
- Bring a pot with water to a boil
- Cut a cross on the bottom of tomatoes
- Boil tomatoes for 20-30 seconds
- Place tomato in the bowl with cold water
- Stir agar in 50 g of water and bring it to boil
- Peel tomatoes
- Puree tomato using a blender
- Add agar water in tomato juice, mix well
- Freeze tomato juice (I used a silicon muffin tray)
- Once frozen thaw tomatoes in the fridge (I let them overnight) on a coffee filter on the top of a cup
- Enjoy your tomato juice!
