Layer cake

La ricetta

Attrezzatura

  1. anello da pasticceria per torte 16 cm di diametro, 8 cm altezza
  2. fogli di acetato 20 cm di altezza (trovati dopo aver passato 8 pasticcerie!)
  3. forno
  4. planetaria o fruste elettriche
  5. teglia da forno per il pan di spagna o equivalente (la mia 36x35 cm)

Ingredienti

Pan di spagna

  • zucchero 175 g
  • uova 250 g (4/5)
  • farina 00 150 g
  • maizena 50 g

Crema alla ricotta

  • ricotta 500 g
  • zucchero 50 g
  • cacao 20 g

Il resto

  • latte 200 g
  • zucchero 5 g
  • caffè a piacere
  • marmellata di albicocche 400 g
  • biscotti frollini 70 g
  • arachidi salate 70 g

Preparazione

Pan di Spagna

  1. uova e zucchero in una bastardella/ciotola
  2. portare a 40°C utilizzando bagnomaria
  3. montare con fruste/planetaria per 7 minuti max velocità (composto molto denso che scrive)
  4. setacciare farina e maizena
  5. incorporare farine al composto di uova
  6. versare in teglia e cuocere a 180°C per circa 15 min (superficie dorata); in mancanza di teglia regolarsi in modo da ottenere 4 dischi da 16 cm alti 1 cm

Crema ricotta

  1. in una ciotola capiente mescolare tutti gli ingredienti con una frusta fino ad ottenere un composto uniforme

Marmellata

  1. metterla in una ciotola e mescolarla fino a farla diventare spalmabile

Bagna

  1. combinare latte, caffè e zucchero

Crumble

  1. tritare biscotti e arachidi, consistenza a piacere

Mise en place
tutto pronto per l'assemblaggio!

Assemblaggio

  1. tagliare il pan di spagna con l'anello da torte  (ottenendo 4 dischi)
  2. posizionare l'anello per torte su una superficie rigida (disco in cartone per torte) e riverstirlo con il foglio di acetato
  3. posizionare il primo disco di pan di spagna sul fondo
  4. inzuppare con la bagna
  5. spalmare 1/3 di marmellata
  6. spolverare con 1/4 di crumble
  7. spalmare 1/4 di crema di ricotta
  8. ripetere per i restanti 4 strati (nell'ultimo non ho messo la marmellata)
  9. in freezer per almeno 4/5 ore
  10. scongelare 2/3 ore prima di consumare (togliere anello e acetato appena tirato fuori dal freezer)

Recipe

Equipment

  1. cake ring 16 cm diameter, 8 cm height
  2. acetate sheet 20 cm height (found after being in 8 pastry shops!)
  3. oven
  4. stand mixer or electric whisks
  5. oven tray or equivalent(mine 36x35 cm)

Ingredients

Sponge cake

  • sugar 175 g
  • eggs 250 g (4/5)
  • flour 00 150 g
  • cornstarch 50 g

Ricotta cream

  • ricotta 500 g
  • sugar 50 g
  • cocoa powder 20 g

All the rest

  • milk 200 g
  • sugar 5 g
  • coffee at your taste
  • apricot jam 400 g
  • cookies 70 g
  • salted peanuts 70 g

Method

Sponge cake

  1. put eggs and sugar in a bowl
  2. whisk on a bainmarie, bring to 40°C
  3. whip on a standard mix for 7 minutes at max speed (it should come very dense)
  4. sift flour and cornstarch
  5. fold flours in the egg mixture
  6. spread on the baking tray and bake at 180°C for about 15 min (surface has to be gold but not brown :D); the goal is to obtain 4 discs of 16 cm of diameter, 1 cm height

Ricotta cream

  1. in a bowl, mix all ingredients

Jam

  1. in a bowl, mix until spreadable

Soak

  1. combine milk, coffee and sugar at your taste

Crumble

  1. grind cookies and peanuts at your prefer texture

Assembling

  1. cut the sponge cake with the cake ring and obtain 4 discs
  2. put the cake ring on a rigid surface (it has to go in the freezer) with the acetate in the inside
  3. put the first disc on the bottom
  4. soak
  5. spread 1/3 of the jam
  6. sprinke with 1/4 of the crumble
  7. spread 1/4 of the ricotta cream
  8. repeat for the other layers (no jam on the top layer)
  9. in the freezer for at least 4/5 ore
  10. defrost 2/3 hours before eating (take off cake ring and acetate just after take off the freezer)

La storiella

Non so se si possa chiamare marmellata, la definirei piuttosto "frutta spalmabile". :) Non sono stato in grado di trovare la pectina al supermercato per gelificare la frutta, non ho fatto la prova piattino (ho appena letto come si fa ;-)) e di sicuro non uso la proporzione 2:1 o peggio ancora 1:1 frutta:zucchero (ma una marmellata non dovrebbe sapere di frutta?!) quindi per me non è "vera" marmellata! Inoltre mi servirebbe un frullatore ad immersione che mi permetterebbe di ottenere una consistenza uniforme-perfetta-translucida come quella commerciale! :D

Con la mia marmellata rustica ho fatto un torta esperimento, una sorta di linzer senza il burro (ma si può?!). Si perché volevo comprarlo, ma qui in Australia TUTTI i negozi erano chiusi durante il good Friday (venerdì santo)! Alla fine è venuta una schifezza secchissima... ma, ma, ma-gnata tutta lo stesso! :D Devo riprovare utilizzando la farina autolievitante per ottenere una pasta più morbida, ma che allo stesso tempo non sarà compatta come quella di una pasta frolla. Vedremo. Comunque l'altro giorno ho fatto la linzer con la pasta frolla montata: una GODURIA, forse il dolce più buono che abbia mai fatto. Un'altra ricetta da mettere nello storico...

A proposito, strano ma vero. Dopo 2 anni che leggo ricette ho scoperto che gli ingredienti dovrebbero essere elencati nell'ordine di utilizzo. Di solito io li ordino per quantità... ok ora rimedio, basta mettersi d'accordo, da oggi rimedio. :)

La ricetta della marmellata

Ho usato 15 g di zucchero per 100 g di polpa di frutta. Per conservare la marmellata sottovuoto bisogna far bollire i contenitori di vetro immersi in un pentolone pieno d'acqua. Io non l'ho fatto visto che la mangio entro un paio di giorni. :)

Ingredienti (quelli che ho usato)

  • Mele (polpa): 100 g (615 g)
  • Apples
  • Zucchero: 15 g (92 g)
  • Sugar

Preparazione

  1. Mettere la polpa della frutta e lo zucchero in una pentola a fondo alto (ho aggiunto acqua per rendere il tutto più liquido)
  2. Portare ad ebollizione
  3. Abbassare il fuoco e lasciare sobbollire fino ad ottenere la consistenza desiderata. (Io 1 ora); bisognerebbe fare la prova piattino, ossia versare un po' di marmellata su un piattino messo nel freezer, se non cola ed è compatta vuol dire che è pronta
  4. Ridurre a purea utilizzanto un frullatore ad immersione se si vuole ottenere una consistenza uniforme

La ricetta della torta SS (Schifezza Secchissima)

Per una tortiera di 18 cm di diametro.

Ingredienti (in ordine di utilizzo!)

  • Uova: 2 (92 g)
  • Eggs
  • Zucchero: 100 g
  • Sugar
  • Vaniglia (estratto, semi o chimica): a piacere
  • Farina 00: 200 g
  • Flour
  • Cannella: 5 g (o a piacere)
  • Sale: 2 g
  • Buccia grattuggiata di un limone (9 g)
  • Lemon rind
  • Latte intero: 50 g
  • Milk
  • Marmellata di mele: 200 g

Preparazione

  1. Preriscaldare il forno a 180° (160 ventilato)
  2. Setacciare farina, cannella e sale
  3. Mescolare con un frullino elettrico le uova, la vaniglia e lo zucchero fino allo scioglimento di quest'ultimo
  4. Aggiungere la farina aggiungendo latte quando la pastella diventa troppo secca
  5. Riempire una tasca da pasticcere (sac-a-poche) con 1/3 della pastella
  6. Versare e livellare il resto della pastella sul fondo della tortiera
  7. Spalmare sopra alla pastella la marmellata
  8. Disegnare le righe della crostata con la pastella nella sac-a-poche
  9. Cake with jam
  10. Infornare per 30-40 minuti
  11. Lasciare nella tortiera per 5 minuti, quindi sformare e raffreddare su una gratella
  12. Buon masticamento. :D

L'angolo della cultura

In teoria per marmellata si intende quella di agrumi, le altre si dovrebbero chiamare composte. La sostanza che gelifica è la pectina, presente in maggiore quantità nella frutta non ancora matura.

The little story

I don't know if it could be called jam, I think I call "spreadable fruit". :) I wasn't able to find the pectine that jellify the fruit at the supermarket, so in my opinion it's not a real jam! Furthermore I also need a blender that permit to obtain a uniform-perfect-pure-commercial-translucent consistency (better artificial? ;-)) like the one that you can find at the supermarket. :D

With my "rustic" jam I made an experimental cake, that would be an imitation of a linzer without butter. Yes, because I wanted to buy it on good Friday, but here in Australia ALL the shops were closed!

Ah, strange but true. After 2 years of recipes I discovered that the ingredients should be listed in the order of use. I usually list them ordered by quantity... ;-)

The recipe for the jam

I used 15 g of sugar every 100 g of fruit pulp. In order to store the jam in a safe way, the glass container in which you put the jam should be immersed in a large pot with water and bring to boil to remove the inside air.

Ingredients (quantity I used)

  • Apple pulp: 100 g (615 g)
  • Apples
  • Sugar: 15 g (92 g)
  • Sugar

Method

  1. Put the sugar and the apples on a pot with high bottom and bring to boil (I added a little bit of water)
  2. Reduce to a simmer and cook for about an hour or until reach the desidered consistency
  3. Blend if you like a puree consistency
  4. Enjoy your jam!

The recipe for the cake

For a 18 cm diameter cake tin. The dough is too dry and not friable because butter is missing!

Ingredients

  • Eggs: 2 (92 g)
  • Eggs
  • Sugar: 100 g
  • Sugar
  • Vanilla flavour (extract, seeds or imitation)
  • Flour (all purpose): 200 g
  • Flour
  • Cinnamon: 5 g
  • Salt: 2 g
  • Grated rind of 1 lemon (9 g)
  • Lemon rind
  • Milk: 50 g
  • Milk
  • Apple jam: 200 g

Method

  1. Sift together flour, cinnamon and salt
  2. Using an electric mixer, beat eggs, sugar and vanilla flavour until combined
  3. Beat in flour and lemon rind, adding milk when the batter become too dry
  4. Spoon 1/3 of the batter on a piping bag
  5. Spread remaining batter on the cake tin
  6. Top with jam
  7. Pipe remaining mixture in a lattice patter over jam
  8. Cake with jam
  9. Bake for 30-40 minutes
  10. Cool in pan for 5 minutes, then on a rack
  11. Enjoy!

The culture corner

Marmalade is made by citrus, jam from other fruits. Pectin is the agent that jellify the jam, and it's present in more higher quantity on raw fruits.
