La storiella

Devo dire che è da un bel po' che non pubblico un post. I buoni propositi di produrne uno a settimana sono andati a quel paese, ma sono parzialmente giustificato. ;-) In questo periodo mi sono dedicato alla prossima partenza e sono stato occupato con i preparativi. Inoltre il mio bel computerino ha deciso di andare in ferie per un po': 16 giorni in riparazione...

Nonostante la pausa blog ho sfornato una quantità di torte notevole (ma quanto mi diverto!?!) per le varie cene e feste di quest'ultimo periodo. Ho pure cucinato una cena per 15 persone... vabbè con l'aiuto di mammà. ;-) Mi piace proprio preparare quantità di cibo a dosi "industriali".

Tra i tanti dolci che ho fatto pubblico l'unico di cui ho sia la foto sia i dati nutrizionali.


La ricetta

Ingredienti per tortiera da 18 cm di diametro

  • Mele: 150 g
  • Ricotta: 150 g
  • Uova: 2 (114 g)
  • Farina 00: 100 g
  • Fecola di patate: 50 g
  • Zucchero: 80 g
  • Zenzero in polvere: 10 g (a piacere)
  • Lievito: 4 g

Preparazione

  • Preriscaldare il forno a 180 gradi;
  • Sbucciare e affettare le mele;
  • riscaldare a fuoco basso la ricotta per intiepidirla, mescolarla in modo da ad ottenere una crema uniforme; mettere da parte;
  • sbattere le uova con lo zucchero con le fruste elettriche per 15 minuti fino ad ottenere un composto soffice che "scriva";
  • incorporare metà della farina 00, la fecola e lo zenzero settaciati con movimenti dall'alto verso il basso per non scomporre l'impasto;
  • incorporare la ricotta;
  • incorporare il resto delle farine;
  • unire il lievito;
  • infornare per 35-45 minuti (fare la prova stecchino)

L'angolo della cultura

Mi pare di avere trovato un metodo che permette di creare un impasto soffice. Sbatto le uova con lo zucchero per 10-15 minuti finchè il composto "scrive". Ossia quando cadono delle gocce dalle fruste nell'impasto non devono affondare subito, ma appunto restare in superficie (e fare appunto una scritta). È la stessa procedura che viene utilizzata per fare il pan di spagna. Infatti il pan di spagna non prevede l'aggiunta di lievito nell'impasto, l'impasto si gonfia grazie all'aria incorporata quando si montano le uova con lo zucchero. L'ho fatto 3-4 volte e mi è riuscito discretamente. Quindi ho adottato la stessa tecnica per l'impasto dei miei dolci lievitati.

The little history

I need to say that it's a long time I didn't publish a post. Good proposals to publish a weekly recipe get lost, but I'm partially justified. ;-) In this period I dedicated my time for my departure and I was busy with the preparations. In addition my netbook decided to go on holiday for a while: 16 days for the reparation... Despite the blog stop I baked a big quantity of cakes (what a good time!) for various dinners and parties of this last period. I also cooked a dinner for 15 people... ok with my mother's help. ;-)

I like cooking big amount of food!

This is the only one cake I baked with photos and nutritional facts.


The recipe

Ingredients for a cake tin of 18 cm of diameter

  1. Apples: 150 g
  2. Ricotta: 150 g
  3. Eggs: 2 (114 g)
  4. Flour 00: 100 g
  5. Potato flour: 50 g
  6. Sugar: 80 g
  7. Ginger: 10 g (as much as one likes)
  8. Baking powder: 4 g

Preparation

  • Preheat the owen at 180 Celsius degree;
  • Peel and slice the apples;
  • warm ricotta at low heat, so it's possible to mix it in the way to obtain a uniform cream;
  • mix the eggs with sugar and ricotta with electric whisk for about 10 minutes until obtaining a soft cream that "writes";
  • blend half of the sieved flours with ginger with movements from bottom to the top;
  • add the ricotta;
  • add the rest of flours;
  • add baking powder;
  • bake for 20-25 minutes (stick test)

I think that I found a method that permit to bake a soft dough. I mix the eggs with sugar until the mix "writes". It means that when drops fall down from whisks they don't dip immediately but they remain on the surface. It's the same procedure used for sponge cake. In fact sponge cake don't use baking powder and the dough inflates thanks to the air incorporated when the eggs are mixed with the sugar. I already bake sponge cake 3-4 times and it made good. Then I adopted the same approach for my raised cakes.
