La storiella

Ahahah che ridere, la settimana scorsa Erik di SBS radio, una radio australiana che trasmette in varie lingue mi ha mandato un'email in quanto aveva scoperto il mio foodblog ed era interessato ad intervistarmi. Così mi ha chiamato martedì mattina, abbiamo fatto 2 chiacchiere e ci siamo accordati per l'intervista telefonica all'ora di pranzo. È stato proprio divertente rispondere alle sue domande, se volete farvi due risate ed ascoltare un bell'accentazzo veneto andate al 39esimo minuto:

La ricetta

La torta 4/4 esiste già così ho fatto la 5/5 ASI. Molto semplice, si pesano le uova e si utilizza la stessa quantità di farina, zucchero, burro (o ricotta o yogurt o latte) e frutta. La quantità di lievito si calcola usando la proporzione 16 g di lievito per 500 g di farina. Ovviamente aumentando la quantità totale dell'impasto si allungano di conseguenza i tempi di cottura.

Ingredienti (per la mia piccola tortiera di 10 cm di diametro)

  • Uova: 55 g (1)
  • Carote: 55 g
  • Farina: 55 g
  • Zucchero: 55 g
  • Latte 40 g + burro 15 g = 55 g
  • Lievito in polvere: 2 g
  • Cannella e vaniglia a piacere

Preparazione

  1. Preriscaldare il forno a 180°C
  2. Imburrare ed infarinare la tortiera
  3. Tagliare le carote in piccoli pezzi
  4. Cuocere le carote a vapore finchè non diventino molto morbide
  5. Ridurre le carote a crema schiacciandole con una forchetta (o schiacciapatae o passaverdura)
  6. Sciogliere il burro (l'ho messo 15 secondi al microonde)
  7. Mescolare gli ingredienti secchi in una ciotola: farina, zucchero e lievito
  8. Mescolare gli ingredienti liquidi in un'altra ciotola: latte, uova e burro fuso
  9. Creare un buco al centro degli ingredienti secchi e versarvi gli ingredienti liquidi
  10. Mescolare non troppo, l'impasto deve restare grumoso altrimenti si forma il glutine e la torta risulterà gommosa
  11. Incorporare la crema di carote
  12. Versare l'impasto nella/e tortiera/e e infornare per 25-30 minuti

L'angolo della cultura

Nella scienza dell'arte pasticcera ogni ingrediente ha un ruolo ben preciso:

  • Farina: forma la struttura che sorregge il resto degli ingredienti. La struttura è formata dal glutine, prodotto da due proteine contenute nella farina: glutenina e gliadina. Queste proteine combinate assieme ad un liquido e all'azione meccanica del mescolamento producono il glutine. Per le torte, al contrario del pane, il glutine non deve svilupparsi molto in quanto produce un prodotto finale elastico, secco e duro. Per evitare tutto ciò è importante limitare l'azione meccanica del mescolare e aggiungere grassi che ostacolano la formazione del glutine. Per questo motivo la pastella dei muffin non deve essere mescolata troppo!
  • Grassi: quando i grassi sono montati (per esempio il burro con lo zucchero) producono delle piccole bolle d'aria che durante la cottura vengono espanse grazie agli agenti lievitanti. Questo produce volume e una torta umida e soffice. I grassi ostacolano la formazione del glutine, come detto sopra. I grassi rendono la torta soffice in quanto rallentano il processo di coagulazione delle proteine contentute nelle uova, farina e latte.
  • Zucchero: quando viene montato con i grassi produce una struttura areata, soffice ed umida. Lo zucchero "ruba" il liquido alla farina ostacolando la produzione del glutine. Abbassa la temperatura di caramellizzazione e produce il colore ambrato delle torte. Contribuisce alla sofficità in quanto rallenta la coagulazione delle proteine contenute in uova, farina e latte.
  • Uova: durante la cottura le uova coagulano e producono la struttura che sostiene gli altri ingredienti. Questo processo viene rallentato dai grassi e dallo zucchero.
  • Latte: contiene proteine che coagulano durante la cottura e contribuiscono a formare la struttura della torta.

Ahaha, very fun, last week Erik Stripparo from SBS radio sent me an email because he discovered my foodblog on the internet and he wanted to interview me! I had a chat with him on Tuesday morning then he asked me for an interview the same day, so at lunch time he called me and he asked me some question about this foodblog. The recipe

This week a very simple cake. 4/4 cake exists so I baked 5/5 cake! Very simple, you have to weight the eggs and use the same amount of ingredients for flour, sugar, butter (or ricotta or yogurt or milk) and fruit. Quantity of baking powder is calculate using the proportion 16 g for 500 g of flour. Obviusly the more quantity of ingredients you use the more time you have to bake the cake.

Ingredients (for my little cake tin of 10 cm of diameter)

  • Egg: 1 of 55 g
  • Carrots: 55 g
  • Flour: 55 g
  • Sugar: 55 g
  • Milk: 40 g + Butter: 15 g = 55 g
  • Baking powder: 2 g
  • Cinnamon or vanilla to taste

Preparation (quick muffin method)

  1. Preheat the oven at 180°C
  2. Line and grease the cake tin
  3. Cut carrot in little pieces
  4. Steam carrot until became very soft
  5. Mash the carrot with a fork and reduce on a cream
  6. Melt the butter (I put in the microwave for 15 seconds)
  7. Mix dry ingredients in a bowl: flour, sugar and baking powder
  8. Mix wet ingredients in another bowl: egg, milk and butter
  9. Make a hole in the bowl with dry ingredients and stir in the wet ingredients without mix too much, the batter should be lumpy
  10. Stir in the carrots
  11. Put the batter in the cake tin and bake for 25-30 minutes

The culture corner

In pastry science every ingredient has a role:

  • Flour: flour build the structure of the cake that sustain other ingredients. The structure is formed from gluten, that is produced from two protein contained in flour: glutenin and gliadin. These proteins combined together with moisture and stirring produce gluten. For cakes, on the contrary for breads, gluten should not be too highly developed because it produce an elastic, dry and tough final product. To avoid this, it's important to limit the mechanical process of stirring and add fats, that prevent the formation of gluten. For that reason muffin batter shouldn't be overmixed.
  • Fats: when fats are mixed (for example sugar with butter) they produce little bubbles of air that are expanded during baking by leaveners. This produce volume and a moist and tender cake. Fats avoid the formation of gluten as said before. Fats are tenderizer because they slow down the process of coagulation of proteins contained in eggs, flour and milk.
  • Sugar: when it's beaten with fats they produce a structure that is tender, aerated an moist. Sugar "steal" moist from flour and avoid the production of gluten. It also lower the caramelization temperature and produce the brown color of cakes. Sugar is a tenderizer because it slow down the process of coagulation of proteins contained in eggs, flour and milk.
  • Eggs: during baking eggs coagulates and produce the structure that sustain other ingredients. This process is slow down by fats and sugar.
  • Milk: it contains proteins that coaugulate during baking process and contribute to the structure and toughness of the cake.

  7. Torno per dirti che ho ascoltato l'intervista.
    Solo che invece del 39mo minuto ho cliaccato al -39 e così mi sono ascoltata anche tutte le prvisioni del tempo e gli allagamenti. Notizie che qui arrivano, ma non con la stessa enfasi. Spero che ora le cose stiano tornando alla normalità...

  8. @parentesiculinaria: per fortuna che sono a 3600 km di distanza dagli alluvioni... La cosa positiva credo sia che gli alluvionati non si mettano a piangere e lamentare per l'accaduto ma si tirino su le maniche e si diano da fare per rimettere tutto a posto. Dovremmo imparare da questo fatto...
