La storiella

Domenica mi sono preparato il piatto icona che non manca mai in un fast-food> l'hamburger!

Hamburger

La ricetta

Ingredienti

  • Macinato di manzo: 140 g
  • Cipolla: 50 g
  • Sale, pepe, cumino, spezie a piacere
  • Sottilette: 1 (21 g)
  • Pane: 120 g

Preparazione

  1. Tagliare la cipolla onion; metà va nell'hamburger, quindi deve essere molto fine, l'altra come guarnizione, quindi potete lasciare i pezzi più grossi
  2. Tagliare il panino :)
  3. In una ciotola, mescolare la carne con la cipolla tritata, sale, pepe, cumino e spezie a piacere (ho usato erbe miste essiccate)
  4. Formare l'hamburger formando una palla che poi si appiattisce con l'aiuto delle mani (io ho usato un coppapasta)
  5. Scaldare una padella come fanno qui (ho usato una antiaderente)
  6. Quando la padella è calda aggiungete un poco d'olio se non è antiaderente
  7. Cucinare l'hamburger girandolo ogni minuto (forse è meglio ogni 20-30 secondi), ci ho messo 4 minuti
  8. Togliere l'hamburger dal fuoco e lasciarlo riposare su un piatto
  9. Nel frattempo, soffriggere la cipolla, sciogliere la sottiletta e scaldare il pane nella padella nel grasso della carne
  10. Una volta che gli ingredienti sono pronti, assemblare il panino come più vi piace e buon appetito!

Sunday I cooked one of the classical icon that you can find in every fast-food: hamburger!

The recipe

Ingredients

  • Bread: 150 g
  • Beef mince: 140 g
  • Onion: 50 g
  • Processed cheese: 1 slice (21 g)
  • Salt, pepper, cumin, spices

Method

  1. Mince the onion
  2. Slice the bread
  3. In a bowl, combine meat with half of the onion, salt, pepper, cumin and spices at our taste (I used mixed herbes)
  4. Form the patty by forming a ball, then press it with your hands in order to flatten (I used a steel ring of 10 cm of diameter)
  5. Heat a fry pan like here
  6. If you want add little bit of oil
  7. Fry the patty by turning it every minute, it takes 4 minutes for me
  8. Remove the patty from the pan and let it rest
  9. In the meanwhile in the same fry pan, fry onion on the same pan in the fat of the meat, melt the slice of cheese and warm the bread
  10. Once the ingredients are ready form the sandwich as you like and enjoy!

Solo il pane perché in ostello non voglio essere sempre più considerato un pazzo-foodblogger-dipendente (molti lo pensano già ;-)). E non ho ancora la faccia tosta di fotografare l'hamburger mentre in cucina ci sono 20 persone che cucinano e mangiano... :)

La storiella

Questa settimana mi sono sparato la serie "In search of perfection". Finalmente ho trovato qualcuno che ha un approccio da "hacker" in cucina ossia che si domanda sempre: "perchè funziona così?". (Come si dice, "la curiosità il seme della conoscenza"? ;-)); e che usa un approccio numerico; non come mia mamma che segue i consigli della nonna e calcola le quantità "ad occhio"... il problema di cucinare senza quantità è che il risultato finale è casuale, a volte può andar bene, ma molte volte qualcosa va storto e non sai mai come riprodurre la stessa ricetta allo stesso modo.

Ah, il protagonista della serie è Heston Blumenthal, il cuoco del "The fat duck", miglior ristorante del mondo 2005... completamente autodidatta. Ha lavorato solo 3 settimane in un ristorante prima di aprire il suo! L'ispirazione della ricetta di oggi arriva da questa puntata:

La ricetta (solo per i panini)

Mi spiace ma illustro solo la ricetta per il panini, altrimenti pubblico il post la settimana prossima se dovessi includere la procedura e i dati nutrizionali per gli hamburger e gli altri ingredienti... prossimamente! Posso solo dire che a spanne con un panino da 120 g e un hamburger da 120 g con 300 g di lattuga si ottiene un buon pasto da 675 kcal con una ripartizione di 43% di carboidrati, 26% di proteine, 30% di grassi e 135 kcal/100g. (Ideale è 50-20-30, 150 kcal/100g).

Ingredienti

  • Farina: 250 g (ho usato quella normale, ma bisognerebbe usare quella con un alto contenuto di proteine, 12%)
  • Latte intero: 150 g
  • Lievito di birra fresco: 12 g
  • Zucchero: 6 g
  • Sale: 6 g
  • Semi di sesamo

Preparazione

  1. Intiepidire il latte a 35°C. L'ho messo nel microonde per 30 secondi.
  2. Sbriciolare il lievito nel latte con lo zucchero e aspettare 10 minuti in modo che il lievito si attivi
  3. Preparare una ciotola con la farina e il sale
  4. Versare il latte con il lievito nella ciotola con la farina e mescolare con un cucchiaio (dicono meglio di legno, io ho usato uno normale)
  5. Versare il composto in un piano leggermente infarinato e impastare per 10-15 minuti. L'impasto finale deve essere elastico e uniforme
  6. Formare una palla con l'impasto, mettelo in una ciotola, coprirla con la pellicola trasparente o un panno umido
  7. Lasciare lievitare in un posto caldo (28°C) e non aerato fino al raddoppio del volume. Il forno dovrebbe andare bene, meglio con una tazza di acqua calda dentro per umidificare. Io ho atteso 1 ora e mezza
  8. Reimpastare per un paio di minuti
  9. Formare i panini usando pieghe del secondo tipo. Ho preparato panini da 60 g
  10. Lasciare lievitare per altri 30 minuti fino al raddoppio
  11. Preriscaldare il forno a 180°C
  12. Spennellare la superficie con latte a temperatura ambiente (ho usato un cucchiaino, non avevo il pennello) e cospargere con i semi di sesamo
  13. Infornare per 20-30 minuti fino a doratura
  14. Raffredare in una gratella. Ho letto se si lasciano raffredare sulla teglia la crosta si ammorbidisce.

Only the bread because I don't want to be considered a crazy-food-dependent (although many people already have this opinion about me :-)). I'm not enough FACCIA TOSTA to take a photo of my burger with 20 people in the kitchen that are cooking and eating... :)

The little story

This week I have watched the series "In search of perfection". Finally I found someone that have an hacker approach at cooking. Always asking "why it works in that way"? (Curiosity is the seed of knowledge?) And always using a numeric approach; not like my mother that follows the advices of the grandmother and calculate the quantity of ingredients by eye... The problem of cooking without quantity is that the final result is casual, sometimes it could works, but many times something bad happens and you can't reproduce the recipe in the same way. And the satisfaction of understand exactly what you did, as well.

Ah, the protagonist of the show is Heston Blumenthal. He's the chef of The fat duck, best restaurant in the world 2005... completely self-taught. He worked only 3 weeks in a restaurant before opening his own! Inspiration of today recipe came from this episode:

The recipe (for the burger buns)

I'm sorry, but I will only expain the procedure to bake the bread, otherwise I will publish the post next week if I have to include procedure and nutritional facts for the burger and the other ingredients... next episode! I could tell that with a bread buns of 120 grams with a burger of 120 g and 300 g of lettuce you have a good meal of 675 kcal with a repartition of carbohydrate 43%, proteins 26%, fat 30% and 135 kcal/100g. (The ideal is 50-20-30, 150 kcal/100g).

Ingredients

  • Flour: 250 g (I used normal flour, but flour with high percentage of proteins 12% should be used)
  • Milk: 150 g
  • Fresh yeast: 12 g
  • Sugar: 10 g
  • Salt: 6 g
  • Sesame seeds

Preparation

  1. Warm the milk at 35°C. I put in the microwave for 30 seconds
  2. Crumb the fresh yeast in the milk with the sugar and wait for 10 minutes
  3. Prepare the flour with the salt in a bowl
  4. Stir the milk with the yeast in the flour with a spoon
  5. Knead the dough in a table for 10-15 minutes. The final dough should be elastic and uniform
  6. Shape the dough into a ball, put in a bowl and cover with a plastic wrap or a damp towel
  7. Leave the dough in a warm (28°C) place without draght. The oven should be a good place. Put a hot cup o water inside to create the right amount of humidity. Wait until it is double its size, 1 hour and a half should be enaugh
  8. Put the dough onto a lightly floured surface and knead a couple of minutes
  9. Form balls of your prefered shape using 2nd type fold. I prepared 60 grams balls.
  10. Leave to rise for 30 minutes in the same warm place
  11. Preheat the oven at 180°C
  12. Spread the surface of the bread with milk and sesame seeds
  13. Bake for 20-30 minutes until golden
  14. Chill on a rack
